Blueberry Banana Chia Muffins

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup plain greek yogurt I like 2% Fage
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 3/4 cup coconut oil
  • 2 cups whole wheat flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 cup chia seeds
  • 1 cup blueberries
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 375 degrees. In a large bowl, mash the banana. Mix in the Greek yogurt, eggs, vanilla and coconut oil (may want to heat the coconut oil for 10 seconds for easier mixing)

  2. Add the whole wheat flour, baking soda, baking powder, and salt. Mix well. 

  3. Fold in chia seeds and blueberries. Bake for 15 to 18 minutes. Let cool before freezing! These can stay out for 2 to 3 days, but I prefer just freezing them all in a big container as soon as they're cooled.
